Per Serve

• 4 slices wholegrain or rye bread
• ½ cup basil pesto
• ¼ cup rocket mixed with ¼ cup basil leaves
• 2 medium tomatoes, thickly sliced
• ½ red onion, sliced
• 3 thick slices fresh mozzarella

Method

Spread fresh bread with basil pesto. Layer first layer with greens and half the tomato, then add another bread layer topped with greens and mozzarella. Add more bread, top with remaining tomato and red onion, finish with greens and last slice of bread. Skewer in place with 4-5 crispy fries before serving with extra fries.

*Tip: make it a vegan tower club, swapping pesto for hummus and mozzarella for grilled eggplant. Use vegan suitable bread.
